Vinified at a low temperature, each stage of the production process is designed to favour a gentle extraction. Then, after racking and malolactic fermentation, the wine is placed in 225-litre oak barrels for the delicate maturation phase. Approximately one third of the barrels used are first-passage. The colour is lively and evokes a beautiful ruby hue. On the nose, it beautifully combines the most typical fruity fragrances with fresh notes of pomegranate. We are located in the northern part of the Graves region, on the left bank of the Gironde. The red wines of Pessac-Léognan, in particular, are mainly produced from Cabernet Sauvignon and Merlot grapes, with possible additions of Cabernet Franc, Petit Verdot and Malbec. They are characterised by their structure, elegance and complexity. Just like this Chteau de Fieuzal, son of a blend of 65% Merlot, 30% Cabernet Sauvignon and 5% Petit Verdot. In the glass, it has a beautiful ruby red colour with garnet reflections. The nose is surprising for the richness of its bouquet, which plays on a symphony of fresh fruit, including blackberries, blueberries and plums, to which are added spicy notes of cloves and a pleasantly iodine finish. In the mouth, however, it proves to be a particularly gratifying, medium-bodied red with sinuous tannins. Velvety on the palate, it has a pleasantly soft and fruity character. Excellent with roasts, even very tasty ones. Perfect with medium-aged cheeses and cured meats.

It is here, in fact, that some of the most famous Chteaus in the area are to be found. Among these is Chteau Dauzac, which offers this marvellous red wine, produced from a selection of Cabernet Sauvignon grapes (72%) and Merlot for the remainder. Harvested by hand, the grapes are sorted on sorting tables, before and after destemming. All processing of Chteau Dauzac takes place by gravity, without the aid of pumps or chemical agents, and with natural yeasts from the vineyard. Vinification in wooden vats, pumping is avoided to optimise maceration. Gentle pumping over takes place during fermentation, which favours optimal tannin extraction. At the end of the fermentation and malolactic fermentation, the wine is placed in French oak barrels, at least two thirds of which are first-passage barrels, for a period of no less than 15 months. 100% vegan, this wine presents itself in the glass with a beautiful deep garnet red colour. The nose captivates with its aromatic richness and the characteristic tension of the greatest vintages. Notes of violets, chocolate, iodine, blackcurrants, plums and cloves. In the mouth, however, it reveals a medium body, with 'ultra-fine' and creamy tannins that perfectly balance the roundness brought by the fruit. Creamy and caressing, this is the red that should be bought and forgotten for years in the cellar. It will be at its best until 2050, and even beyond... For several decades.

The precision and finesse of the structure are simply 'impressive'. Super enjoyable, this Bordeaux red is the ideal snack companion. Excellent with cured meats and cheeses. Perfect with savoury, long-cooked meats.

Super careful harvest, preceded by careful selection of the best grapes in the vineyard, processing takes place in stainless steel tanks. A very traditional winemaking process that culminates with a maturation phase in wood lasting about 14 months, in barriques of course. The result is a red characterized by a beautiful deep color and a distinctly fruity character. Berries, nuts and hazelnuts, chocolate and sweet spices. In the mouth, then, it proves to be a full-bodied wine with round tannins and a long and satisfying finish. An excellent companion for lunches and dinners with friends, it is at its best when paired with grilled red meats.

We are, of course, in the heart of the Bordeaux region, where red wines are almost always made from a blend of two main grape varieties, Cabernet Sauvignon and Merlot. This Chteau du Tertre, AOC Margaux, is no exception, where, to the two main players, is added a part of Cabernet Franc (13%) and one of Petit Verdot (6%). Manual harvesting of the grapes that have reached perfect ripeness, the best bunches are carefully selected before being sent for processing. Vinification takes place in wooden vats, cement and temperature-controlled stainless steel tanks. The maceration phase lasts about 21 days and is followed by alcoholic fermentation. Then, after racking and malolactic fermentation, the wine is placed in French oak barrels for a period of no less than one year. It should be noted that at least one third of the barrels are renewed each year. Deep and intense red, the nose evokes notes of ripe fruit, with aromas of currants and berries, as well as roses, flowers and citrus peel. In the mouth, it reveals itself to be a full-bodied red, with creamy, velvety tannins that prolong the pleasure of each sip for several seconds. A dense, mouth-watering, fresh and aromatic wine, this Chteau du Tertre is a great Bordeaux to appreciate in its youth and will reveal its full ageing potential with time.

Or because they are the result of a long process that involves the collaboration of a particular mould that must hit the vineyards in the right season and without which it would not be possible to obtain the same result. Maybe, finally, because when you have the opportunity to taste them you understand immediately that Sauternes are not simply dessert wines but rather the very symbol of elegance and the essence of French style. This elegant passito proposed by Chteau Les Justices is the child of three grapes. Sémillon, in clear predominance, with Sauvignon blanc and Muscadelle. There's just a bit of the latter. Roughly 5% of the total. The harvest is accurate. Only grapes affected by mould but without defects should arrive in the cellar. It is necessary to go through the vineyard several times to complete the job and the workforce must be super-skilled to avoid making mistakes. After careful vinification of the wine at the right temperature and time, we move on to the maturation phase which, in the case of this wine, never lasts less than two years. Time more than justified by the final result. It is enough to bring the glass close to the nose to be certain of this. Notes of yellow-fleshed and tropical fruits, white flowers, pear, apple and acacia honey. On the palate, however, it reveals itself to be fresh, with a nice breadth and excellent balance.

Golden yellow, intense and lively, the nose reveals an enchanting aromatic appeal, with a wide range of scents from cedar wood to spices, from old roses to passion fruit. In the mouth, however, it is super concentrated without being overpowering. Sweet but not too sweet, it is the perfect wine to end (on a high note) a lunch or dinner. Serve with a bowl of fresh fruit or a simple and tasty dessert.
