Dragon de Quintus is what is known in the trade as a 'second wine', offered by Chteau Quintus. 75.2% Merlot and 24.8% Cabernet Franc, this Bordeaux red enjoys excellent value for money. A characteristic that makes it simply ideal on more than one occasion. Despite the fact that it is the house's little brother, all the stages of its production certainly do not lack care and attention. Starting with the careful selection of the best bunches in the vineyard to bring to the cellar only the best grapes, those that are healthiest and have reached a perfect level of ripeness. Vinified at a low temperature, each stage of the production process is designed to favour a gentle extraction. Then, after racking and malolactic fermentation, the wine is placed in 225-litre oak barrels for the delicate maturation phase. Approximately one third of the barrels used are first-passage. The colour is lively and evokes a beautiful ruby hue. On the nose, it beautifully combines the most typical fruity fragrances with fresh notes of pomegranate. Floral hints reminiscent of violets complete the rich bouquet. In the mouth, the attack is soft and 'finely woody'. The pleasant, ripe tannins combine perfectly with intense notes of red fruit.

Produced by Chteau La Lagune, this prestigious Haut-Médoc 3ème Cru Classé fully represents the style and elegance of the great reds of Bordeaux. The result of biodynamic cultivation, the grapes are grown in an environmentally friendly manner. In its blend, mainly Cabernet Sauvignon, which alone accounts for 70% of the mass, followed by 20% Merlot and 10% Petit Verdot. Gentle extraction and rapid fermentation give the wine an intense colour and a delicate tannic texture. The post-fermentation maceration increases the complexity and structure of the wines, giving them aromatic richness, intensity and freshness. In the glass it has a beautiful, deep, dense colour, with enveloping aromas of blackcurrants, dried herbs, paprika, orange peel and tobacco leaves. Medium-bodied, it has fine, polished tannins. A small biodynamic masterpiece. From the heart of the Margaux district, in Haut-Médoc, Chteau Durfort-Vivens offers this 2ème Cru Classé, a red that is particularly representative of the winery's production. Margaux is characterised by a unique microclimate, influenced by the proximity of the Atlantic Ocean. Sunny days and cool nights create an ideal environment for the ripening of the grapes, in particular Cabernet Sauvignon, which accounts for around 97% of the blend and finds its finest expression here. Harvest and vinification take place by parcel, enhancing the unique characteristics of each vineyard. Alcoholic fermentation takes place with natural yeasts and daily pumping over to favour delicate extractions. Malolactic fermentation completes the process, giving the wine softness and complexity. The wine then matures for approximately 18 months in new barrels (70%) and terracotta amphorae (30%), giving the wine structure and longevity. Intense ruby red in colour, the nose has a complex and elegant bouquet, where notes of blackberry, blueberry, blackcurrant and bark intertwine. In the mouth, it is full and layered, with fine, velvety tannins that help give the wine structure and persistence. Pauillac is a wine region of great prestige, a land of high quality red wines. This is due to an exceptional terroir and the predominant use of Cabernet Sauvignon, which finds an ideal habitat here on predominantly gravelly soils. In addition, Pauillac is home to several prestigious chteaus, including Chteau Haut-Bages Libéral, which each year produces wines with a complex aromatic profile and a remarkable capacity for ageing. In this case, the basic blend consists of 72% Cabernet Sauvignon and Merlot for the remainder. Vinification is carried out in a parcelled and individualised manner, and is characterised by frequent pumping over to extract colour and tannins and a particularly soft vertical pressing. After processing, the wine matures for about 16 months, divided between barriques and amphorae. Freshness, power and elegance are the key words of Chteau Haut-Bages Libéral. Intense ruby red in colour, the nose reveals a broad bouquet with clear notes of red and dark fruit, accompanied by hints of undergrowth and hints of liquorice and vanilla, due to the ageing in wood. In the mouth it is enveloping and balanced, characterised by ripe and silky tannins, with lovely mineral and spicy notes. The finish is also long and pleasant, prolonging the pleasure of each sip for several seconds. Good today, this Pauillac is certainly in no hurry to be uncorked. For a few years, it will be able to evolve in the bottle, waiting for the evening to be the right one. An all-meat menu, with tasty dishes and a slightly spicy character.

Pessac-Léognan, in the panorama of the Bordeaux region, is one of the most prestigious and oldest production areas. One of the few to have the same reputation for the production of both red and dry white wines. It is no coincidence that Pessac-Léognan is home to some of the most renowned wineries in Bordeaux, including Chteau Haut-Brion, one of the five Premier Cru Classé from 1855. We are located in the northern part of the Graves region, on the left bank of the Gironde. The red wines of Pessac-Léognan, in particular, are mainly produced from Cabernet Sauvignon and Merlot grapes, with possible additions of Cabernet Franc, Petit Verdot and Malbec. They are characterised by their structure, elegance and complexity. Just like this Chteau de Fieuzal, son of a blend of 65% Merlot, 30% Cabernet Sauvignon and 5% Petit Verdot. In the glass, it has a beautiful ruby red colour with garnet reflections. The nose is surprising for the richness of its bouquet, which plays on a symphony of fresh fruit, including blackberries, blueberries and plums, to which are added spicy notes of cloves and a pleasantly iodine finish. In the mouth, however, it proves to be a particularly gratifying, medium-bodied red with sinuous tannins. Velvety on the palate, it has a pleasantly soft and fruity character. Excellent with roasts, even very tasty ones. Perfect with medium-aged cheeses and cured meats.

The Margaux area certainly needs no introduction within the Bordeaux appellation. It is here, in fact, that some of the most famous Chteaus in the area are to be found. Among these is Chteau Dauzac, which offers this marvellous red wine, produced from a selection of Cabernet Sauvignon grapes (72%) and Merlot for the remainder. Harvested by hand, the grapes are sorted on sorting tables, before and after destemming. All processing of Chteau Dauzac takes place by gravity, without the aid of pumps or chemical agents, and with natural yeasts from the vineyard. Vinification in wooden vats, pumping is avoided to optimise maceration. Gentle pumping over takes place during fermentation, which favours optimal tannin extraction. At the end of the fermentation and malolactic fermentation, the wine is placed in French oak barrels, at least two thirds of which are first-passage barrels, for a period of no less than 15 months. 100% vegan, this wine presents itself in the glass with a beautiful deep garnet red colour. The nose captivates with its aromatic richness and the characteristic tension of the greatest vintages. Notes of violets, chocolate, iodine, blackcurrants, plums and cloves. In the mouth, however, it reveals a medium body, with 'ultra-fine' and creamy tannins that perfectly balance the roundness brought by the fruit. Creamy and caressing, this is the red that should be bought and forgotten for years in the cellar. It will be at its best until 2050, and even beyond... For several decades.

AOC Saint-Émilion is an appellation of controlled origin referring to wines produced in the region of the same name, in the Bordeaux area. This is undoubtedly one of the most interesting areas of the appellation, ideally located on a plateau with soils rich in limestone and clay. These unique characteristics make Saint-Émilion one of the most interesting areas for the production of red wines, Merlot-based, to which Cabernet Franc and, to a lesser extent, Cabernet Sauvignon may be added from time to time. Saint-Émilion Grand Cru wines are known for their elegance, complexity and structure. Just as in this case. Chteau Saintayme, 100% Merlot, is a splendid red, characterised by a beautiful ruby colour with deep garnet highlights and an exquisitely fruity soul. On the nose, it is easy to detect black and red fruit, i.e. currants, blackberries, raspberries and strawberries. In the mouth, however, the pleasantly fruity character is complemented by a subtle savoury and mineral note. Medium-bodied, it has creamy, smooth tannins and a long finish. The precision and finesse of the structure are simply 'impressive'. Super enjoyable, this Bordeaux red is the ideal snack companion. Excellent with cured meats and cheeses. Perfect with savoury, long-cooked meats.

Bordeaux, in its many facets, is always a guarantee. Hard to go wrong with the taste. You certainly won't go wrong buying this Le Prélat de Pape Clément, 60% Merlot, 35% Cabernet Sauvignon and 5% Cabernet Franc. Impossible to imagine a more Bordeaux-style cut than this. Super careful harvest, preceded by careful selection of the best grapes in the vineyard, processing takes place in stainless steel tanks. A very traditional winemaking process that culminates with a maturation phase in wood lasting about 14 months, in barriques of course. The result is a red characterized by a beautiful deep color and a distinctly fruity character. Berries, nuts and hazelnuts, chocolate and sweet spices. In the mouth, then, it proves to be a full-bodied wine with round tannins and a long and satisfying finish. An excellent companion for lunches and dinners with friends, it is at its best when paired with grilled red meats.

Chteau du Tertre is one of the fine wineries in the Margaux area. We are, of course, in the heart of the Bordeaux region, where red wines are almost always made from a blend of two main grape varieties, Cabernet Sauvignon and Merlot. This Chteau du Tertre, AOC Margaux, is no exception, where, to the two main players, is added a part of Cabernet Franc (13%) and one of Petit Verdot (6%). Manual harvesting of the grapes that have reached perfect ripeness, the best bunches are carefully selected before being sent for processing. Vinification takes place in wooden vats, cement and temperature-controlled stainless steel tanks. The maceration phase lasts about 21 days and is followed by alcoholic fermentation. Then, after racking and malolactic fermentation, the wine is placed in French oak barrels for a period of no less than one year. It should be noted that at least one third of the barrels are renewed each year. Deep and intense red, the nose evokes notes of ripe fruit, with aromas of currants and berries, as well as roses, flowers and citrus peel. In the mouth, it reveals itself to be a full-bodied red, with creamy, velvety tannins that prolong the pleasure of each sip for several seconds. A dense, mouth-watering, fresh and aromatic wine, this Chteau du Tertre is a great Bordeaux to appreciate in its youth and will reveal its full ageing potential with time.

There is something fascinating about the wines of Sautern. It must be the fact that they are rare and valuable. Or because they are the result of a long process that involves the collaboration of a particular mould that must hit the vineyards in the right season and without which it would not be possible to obtain the same result. Maybe, finally, because when you have the opportunity to taste them you understand immediately that Sauternes are not simply dessert wines but rather the very symbol of elegance and the essence of French style. This elegant passito proposed by Chteau Les Justices is the child of three grapes. Sémillon, in clear predominance, with Sauvignon blanc and Muscadelle. There's just a bit of the latter. Roughly 5% of the total. The harvest is accurate. Only grapes affected by mould but without defects should arrive in the cellar. It is necessary to go through the vineyard several times to complete the job and the workforce must be super-skilled to avoid making mistakes. After careful vinification of the wine at the right temperature and time, we move on to the maturation phase which, in the case of this wine, never lasts less than two years. Time more than justified by the final result. It is enough to bring the glass close to the nose to be certain of this. Notes of yellow-fleshed and tropical fruits, white flowers, pear, apple and acacia honey. On the palate, however, it reveals itself to be fresh, with a nice breadth and excellent balance.

Man and nature work closely together to create elegant wines like this Symphonie De Haut-Peyraguey. People contribute to the care and maintenance of the vineyards, which are passionately managed as if they were private gardens. Nature, through a unique microclimate, encourages the appearance each year of the so-called noble rot, or Botrytis cinerea, a key ingredient in the production of the noblest of sweet wines in France, and perhaps the world. This Symphonie De Haut-Peyraguey, in particular, comes from a blend of 95% Semillion grapes and Sauvignon Blanc for the remainder. The grapes, manually selected according to the degree of ripeness and mold attack, are carefully vinified, and the resulting wine is aged in oak barrels. Golden yellow, intense and lively, the nose reveals an enchanting aromatic appeal, with a wide range of scents from cedar wood to spices, from old roses to passion fruit. In the mouth, however, it is super concentrated without being overpowering. Sweet but not too sweet, it is the perfect wine to end (on a high note) a lunch or dinner. Serve with a bowl of fresh fruit or a simple and tasty dessert.

Les Tourelles de Saint-Robert has a deep, bright ruby red color with fresh violet hues. The nose reveals spicy and floral scents, with hints of cherry jam and violets. In the mouth, however, it turns out to be a full and well-balanced wine. Notes of black currant jam and touches of vanilla make this Bordeaux red particularly elegant and persistent. Chteau Saint-Robert makes it through super-traditional vinification in thermoregulated stainless steel vats of Merlot and Cabernet Sauvignon grapes. Very pleasant and not overly demanding, this is the right wine to accompany a Sunday lunch. Baked pasta, meat sauce and grilled ribs or a rich meatloaf are all dishes that go with it beautifully.
