Acclaimed from the outset as one of Italy's greatest and most innovative reds, Montiano is the result of a blend of Merlot grapes planted by grafters from Montpellier in an area traditionally devoted to white vines. Merlot, however, proves to have a great capacity for adaptation on these hills and the grapes are able to reach an extraordinary level of ripeness, thus giving rise to wines of the highest elegance, perfectly balanced and remarkably pleasant. Specifically, this Merlot comes from vineyards with low productivity. The grapes, harvested by hand, immediately upon arrival at the winery undergo a rigorous manual selection process so that only the best berries are sent to fermentation. At the end of alcoholic fermentation, the resulting wine is passed into French oak barriques, where it matures for no less than 12 months. Deep ruby in colour, the nose of Montiano impresses with the richness of its bouquet, with notes of red fruit, spices and hints of vanilla. In the mouth it is round and soft. Elegant, particularly enjoyable and persistent on the palate. To appreciate it at its best, the producer recommends serving it in large goblets, where it can come into contact with oxygen and develop its aromas to the full. At a temperature of 18 degrees, it should be served with haute cuisine meat dishes.

Conubium, a Latin name that evokes marriage, a set of ideas but also the intentions of the inhabitants of a town that had forgotten its own wine-growing tradition, is a Malvasia produced by Cantina Le Macchie. Latium IGT, it comes from a pure processing of the best grapes harvested in the company's vineyards, which are about 650 metres above sea level. Old vines, 40/50 years old, which produce few bunches of very high quality. The result is a finely aromatic wine, delicately structured, with scents of aromatic herbs, fresh citrus fruits and white flowers. A pleasantly fresh wine, perfect as an aperitif, which can also easily find its place on the table. It goes well, for example, with hors d'oeuvres and first courses of Mediterranean cuisine.

The mix, or rather the cut, as the experts say, is unusual but interesting. 40% Shiraz grapes and 60% Cesanese (hence the name). The prince of international grape varieties, successfully and satisfactorily cultivated in every corner of the globe, and the small native grape variety rooted in its territory of origin. A wine that, in the intentions of the producer, must represent the spearhead of the production. It is not by chance that it is not offered every year but only when the harvest is really good. Only in the best vintages. In the glass it has a beautiful deep ruby red colour. The nose has a broad bouquet of aromas ranging from ripe red fruit to sweet spices. On the palate, it is round and intense. Balanced and persistent. A wine with great personality and a touch of Italian madness.

Let us start immediately with the interesting basic blend chosen for this wine: Malvasia del Lazio and Malvasia di Candia, for 80%, and Viognier for the remainder. As is often the case with the products of the fine Lazio winery Castel de Paolis, the wine is therefore a blend of international and indigenous grapes. Campo Vecchio, IGT Lazio Bianco, is a dry white wine offered by the Grottaferrata-based company uninterruptedly since 1994, the year of the first harvest. Superbly vinified in temperature-controlled steel vats to make the most of the initial fruit, before bottling the wine is only refined in steel. This reveals a beautiful goblet characterised by a golden yellow colour, with particularly intense notes of fruit and flowers. In the mouth it is very soft, with a calibrated alcohol content and good persistence. A wine of excellent roundness, it is perfect with fish first courses, but also with delicate vegetable and white meat preparations.
