From the heart of the Langhe, from the homeland of the noble Nebbiolo, the Sartirano family offers this interesting Monferrato DOC Nebbiolo 2021. They produce it from a selection of grapes from the San Silvestro winery. Ancient knowledge, modern technology. This is the secret of a red wine that is the result of careful processing of the best grapes. Immediately after the harvest, the bunches of grapes are quickly brought to the cellar, where the delicate transformation phase begins. It starts with the crushing and destemming of the grapes, followed by a fermentation phase in steel, in temperature-controlled tanks. The delicate maceration phase lasts for 4 days, with daily pumping of the must over the cap of skins. In the glass it has a beautiful, intense and delicate ruby red colour. On the nose, it surprises with the pleasantness of its aromas reminiscent of thyme and wild flowers. In the mouth, however, what is most striking is the wine's distinctive tannic component, well integrated with all the other components but still perceptible. Medium-bodied, it is a pleasantly dry red, destined for a wide range of pairings. Perfect, for example, with baked pasta, roasts, grilled meats but also with mature and piquant cheeses.

Class and spontaneous vivacity are the characteristics that distinguish Nebbiolo. This is rightly claimed by the owners of the Ghisolfi cellar. After all, this is an ancient wine, already known in the cellars of the Royal House of Savoy since the 1600s. The dialect term Sbardajì literally means scattered, scattered. A name that is meant to evoke the origins of the grapes used to produce this red wine, which literally come from vineyards distributed between the Langhe and Roero, in the municipalities of Monforte, Monteu Roero and Priocca. Spontaneous fermentation using indigenous yeasts and great temperature control at every stage of vinification to bring out the best of the freshness and fragrance qualities of the original grapes. This is followed by maturation in small oak barrels for 12 months and a short bottle ageing period before the wine can definitively be considered ready for the shelf. In the mouth, it is warm, savoury and velvety, thanks to a moderate tannic charge. To do it justice on the table, it needs to be paired just right. Vinification takes place in temperature-controlled stainless steel tanks, followed by 12 months of ageing in oak barrels, which gives the wine structure and complexity. A further refinement of 6 months in the bottle completes the maturation process and makes the wine ready to be tasted. On the nose, Nebbiolo d'Alba DOC Belcolle presents a broad and intense bouquet, characterised by floral notes of violets and roses, hints of ripe fruit such as cherries and plums, and delicate spices. With ageing, aromas of dried fruit, cocoa and liquorice develop. In the mouth it is soft and velvety, with elegant, well-integrated tannins. The structure is balanced and the aromatic persistence is long, with a mineral and lingering finish. It ideally accompanies first courses with meat sauces, main courses of red and white meat, medium and long matured cheeses.

The nose reveals a complex and enveloping bouquet, with hints of ripe berries, sweet spices, vanilla and cocoa. In the mouth, the wine is full and structured, with velvety tannins and a persistent, harmonious finish. Its structure and fine complexity make it ideal with red meat dishes, game, mature cheeses and pasta dishes with meat sauce. Also try it with mushroom risottos or with white Alba truffles.

It comes, of course, from the careful processing of 100% Nebbiolo grapes, harvested in the estate vineyards when they reach perfect ripeness. In the cellar, processing is traditional. Alcoholic fermentation, in particular, takes place in steel tanks and lasts for about 3 weeks. Then, in the post-maceration phase, the wine remains in contact with the skins for a further 4 weeks before being racked off. Malolactic fermentation and ageing in oak barrels follow. Ruby red colour, with slight garnet hues. The nose is rich, powerful and concentrated, with distinct hints of ripe fruit. In the mouth it is fresh and full-bodied, with hints of red and black fruit, such as blueberry and blackberry. The tannin is ripe, soft, silky and well integrated. There is a particular almond note on the finish. A balanced and refined red, on the table it does not struggle to find its rightful place. Excellent with traditional hors d'oeuvres and meat dishes. Excellent with medium-aged cheeses and mushroom dishes.
