The indication Blanc de Blancs on the label of this fine Champagne produced by Maison Perrier-Jouët clearly indicates that it is a white sparkling wine, made only from white grapes. In Champagne, this basically means that it is a 100% Chardonnay. Grapes from a selection of the best plots owned by the company, all classified as Premier and Grand Cru. The Maison, after all, has always been famous for the precision with which it takes care of every aspect of production, right down to the choice of the ideal moment for harvesting. As for the time spent on the lees - another essential datum for grasping the quality of a classic method (or Champenoise) - in the case of this Blanc de Blancs, it is prolonged for a good three years, giving the finished wine great depth and pleasantness. Straw yellow in colour with greenish highlights and a fine, persistent perlage, the nose opens with floral notes reminiscent of elderflower and jasmine, then citrus notes of lime and grapefruit, yeasts and pastries. In the mouth it is fine but at the same time vigorous. Pleasantly mineral and with excellent persistence. Excellent as an aperitif, this Champagne is ideal with all fish dishes, shellfish and molluscs. It is also pleasant with a simple selection of fresh cheeses. Badia a Passignano is one of the beautiful estates owned by the Antinori family, a name that, in the world of wine, certainly needs no introduction. It is located above Sambuca Val di Pesa, 3 km south of Tenuta Tignanello, another of the family's 'beautiful' estates. 223 hectares, 65 of which are planted with vines, on land that is ideal for the production of Sangiovese, between 250 and 300 metres above sea level, one of the most beautiful and vocated areas of Chianti Classico. It is no coincidence that vines have always been cultivated here. This is proven by the discovery in 1983, in the land surrounding Badia a Passignano, of a thousand-year-old vitis vinifera plant. A 100% Sangiovese, this Gran Selezione presents itself in the glass with a beautiful ruby red colour. On the nose, intense notes of ripe red fruit, cherries under spirits and black cherry stand out, combined with citrus sensations of blood orange and delicate floral hints of lavender. Sweet nuances of vanilla and pleasant spicy hints of cloves and leather complete the complex bouquet. In the mouth, on the other hand, the entrance is enveloping, well supported by vibrant and silky tannins that also accompany a long, persistent and savoury finish. Pleasant is the aftertaste of bitter cocoa and citrus fruits. To do justice to such a wine... there is nothing better than a juicy grilled steak.

Pride of Umbria, Sagrantino di Montefalco is the most popular DOCG among fans of red wines of great character. An incredibly powerful and elegant wine that is only produced in this green corner of Italy. Super selected grapes of 100% Sagrantino, coming only from vineyards owned by Cantina Tudernum. After harvesting, the skins are left to macerate for about three weeks, keeping the temperature always under control. Then we proceed with racking to separate the flower wine from the now exhausted marc. The delicate maturation phase, essential for this wine naturally endowed with great personality, takes place in French oak barriques. A forced stay of at least one year which, together with the one in the bottle before being rleased to market, brings the total refinement of this red wine to about 33 months. Just under 3 years of waiting to taste a glass of this wine, incredibly intense both in the nose and in the mouth. It's a red wine that should undoubtedly be paired with very structured dishes, including game, or very mature cheeses and spicy flavour.

It is the younger, smiling brother of the noble Brunello. Made from the same Sangiovese grapes grown in the same area as Montalcino, but meant to be drunk earlier. Casato Prime Donne, owned by Donatella Cinelli Colombini's family since at least the end of the 16th century, is a marvellous estate of 40 hectares located on the northern side of the Montalcino hill. Here the climate is cooler than on the other side of the mountain and the Sangiovese grapes reach maturity without suffering from excessive heat and stress that risk compromising their great aromatic complexity. The particularity of this wine, however, also derives from the indigenous yeasts used to start the alcoholic fermentation. The result of experimentation that began in 2008, the yeasts typical of this territory are unlike any other. After racking, the wine matures in oak barrels of different sizes and toasted to different degrees, which can vary by several months depending on the vintage. The final objective is to obtain a perfectly harmonious and satisfying Rosso di Montalcino. Rich in flavour, with soft tannins and great finesse.

The label reads TrentoDOC, a sign that we are in the presence of a bottle of quality Metodo Classico from one of the most vocated areas for the production of bubbles in Italy. Specifically, this is a Rosé Riserva, obtained from the processing of Chardonnay and Pinot Noir grapes. It is offered by Altemasi, a brand owned by the CAVIT winery, a further guarantee of quality. The grapes come from vineyards located between 450 and 600 metres above sea level, on the Brentonico Plateau and in the Cembra Valley, on soils of ancient glacial origin. The bases, processed strictly in steel, are bottled and then undergo a slow refinement of over 36 months. The result is a sparkling wine characterised by a pink colour with slight auburn reflections. As soon as it is poured, it is covered with a creamy white froth, well supported by a continuous, fine perlage. The aromas are complex, with notes of ripe cherry, blackberry and red apple. In the mouth, however, it reveals itself to be a wine characterised by a full, enveloping flavour with great balance and persistence. Suitable as an aperitif, on the table it accompanies soups and main courses, including white meats.
