Deep ruby red in colour, with hints tending towards garnet, the nose opens with intense notes of dark chocolate, leather and coffee, with a slight hint of spices. In the mouth there is a perfect taste-olfactory correspondence: cocoa and coffee return with intensity, accompanied by a pleasantly peppery and persistent finish. The soft, well-integrated tannins guarantee an elegant, enveloping sip. Good already today, this Riserva from Torre Zambra is ideal to drink within 10 years, during which it can develop further aromatic nuances. Stewed red meats, barbecued meats and mature cheeses are its ideal companions.

Poggio Salaia, Pecorino IGT by Torre Zambra, is an organic wine. It is produced in Villamagna, a unique area between the Adriatic Sea and Majella. Pecorino is one of the oldest indigenous grape varieties in central Italy, characterised by extraordinary adaptability and the ability to offer fresh, complex wines. Interesting curiosity: the name 'Pecorino' is said to derive from the fact that sheep used to graze its particularly sweet grapes during transhumance. Its vinification begins with a 60-hour maceration of the skins, a process that allows the best possible extraction of aromas and structure. After fermentation, the wine is aged on fine lees in stainless steel vats for two months, a step that amplifies the organoleptic characteristics and gives the wine greater complexity. This is followed by further bottle ageing for a further two months before release. Brilliant straw yellow in colour with greenish reflections, intense citrus notes emerge on the nose, with lemon in the foreground, accompanied by light nuances of white flowers and a slight minerality. In the mouth, the initial freshness gives way to a well-marked savouriness, which makes the wine intriguing and pleasantly complex. The finish is long and persistent, with a pleasant sensation of cleanliness and harmony. It goes well with fish dishes such as grilled meats, carpaccio and seafood soups. Also good with fresh cheeses, grilled vegetables and delicate risottos.

Inspired by Dorian Gray, the charming protagonist of Oscar Wilde's famous novel, this wine is a celebration of youth and beauty. But unlike Wilde's character, the Dorian proposed here by Torre Fornello evolves, refines and improves with time, acquiring complexity and elegance. Dorian is born in the hills of Ziano Piacentino, a privileged area of the Val Tidone in Emilia Romagna, famous for its long tradition of winemaking. Here, the varied soils and continental climate, characterised by good temperature ranges between day and night, favour a slow ripening of the grapes. Torre Fornello also adopts organic cultivation that protects biodiversity and the health of the environment. Composed of a mix of grape varieties with 30% Barbera, 30% Bonarda, or rather Croatina, 10% Pinot Noir, 10% Cabernet Sauvignon to which a further 20% of other grapes are added. In the cellar, the vinification of Dorian begins with a long maceration in contact with the skins for 20 days to extract the maximum aromas, tannins and colour from the grapes. Part of the wine, about 10% of the mass is then refined in oak barrels for 3 months, acquiring greater complexity and softness. To the eye, Dorian has a brilliant ruby red colour. The nose offers a concentrated yet refined bouquet, with notes of wild berries, black cherry and liquorice, enriched by spicy touches of white pepper. In the mouth it is soft and velvety, with silky tannins and a long, enveloping persistence. The flavour is enriched by balsamic nuances, accompanied by notes of cocoa, leather and liquorice, giving depth and complexity to the sip. Thanks to its structure and fine complexity, Dorian is an extremely versatile wine for pairing. It goes well with meat dishes such as grilled meats and stews. A genuine wine that comes from an area rich in history and highly vocated, this Gutturnio originates from vineyards in Ziano Piacentino, a small municipality situated in the hills. An area known for the variety of its soils and favourable climate. The name Gutturnio derives from the ancient Roman vessel, the 'gutturnium', used for drinking wine during banquets. Specifically, this one proposed by Torre Fornello is a blend of 60% Barbera and 40% Bonarda, or rather Croatina, two grape varieties that together give life to a wine characterised by a beautiful pleasantness. The Barbera, in particular, is known for its acidity and freshness, and gives the wine great drinkability. Croatina, for its part, brings softness, body and an aromatic bouquet reminiscent of berries. After the grapes are harvested, Barbera and Bonarda are vinified separately. This starts with maceration and fermentation at a controlled temperature for about 7-10 days. Once fermentation is complete, the two masses are cold-assembled and re-fermentation takes place in an autoclave, according to the Charmat method. To the eye, this sparkling wine from Piacenza has a brilliant ruby red colour. The nose is fresh and vinous, with clear notes of berries, such as blueberries and raspberries. In the mouth it is rich, full and persistent, with a flavour reminiscent of ripe berries. The slight effervescence enhances the freshness, inviting a second sip. We are in one of Italy's most fascinating wine-growing areas. We are on Mount Etna, 'the' volcano, appreciated by millions of enthusiasts for its extraordinary properties. The balance of its microclimate is guaranteed by the volcanic nature of the soil, the altitude of the vineyards, which can be as high as 600-700 metres, and the considerable temperature range between day and night. The name Scalunera, which in Sicilian means 'flight of steps', evokes the evocative panorama that cradles this wine. The flanks of Etna are in fact lined with a jumble of lava stone walls reminiscent of the steps of an ancient amphitheatre. A red wine from the territory, Scalunera is made from a selection of Nerello Mascalese grapes with the addition of a small percentage of Nerello Cappuccio (Nerello Mascalese 97% - Nerello Cappuccio 3%), grapes from organically grown vineyards. After vinification, the wine rests for 24 months in oak barrels and, after bottling, for at least another 4 months in the bottle. An expressive and complex red, Scalunera surprises with its intense aromas of red fruits, dates and a slight smokiness. Soft on the palate and concentrated, it is characterised by a savoury finish in harmony with silky tannins. An elegant, meditation wine, it is perfect with traditional Sicilian meat dishes such as pork and lamb, but also with tasty fish, goat cheese and vegetables.

A rosé that expresses the best of Abruzzo's winemaking tradition, this wine is born in Villamagna, in the province of Chieti, on hills between the Adriatic Sea and the Majella mountain range, two natural elements that combine to create strong temperature swings between day and night, ideal for obtaining fresh wines rich in aromas. Cerasuolo d'Abruzzo DOC is not a simple rosé, but a nationally and internationally recognised expression of excellence. It is distinguished by its cherry colour and typical aromas and flavours that are directly reminiscent of Montepulciano, the native vine from which it originates. Passo Sacro is made from 100% Montepulciano grapes harvested at the end of September. The skins remain in contact with the must for about 60 hours, until the characteristic intense cherry colour is obtained. Ageing takes place on fine lees in stainless steel vats for 2 months, followed by a further 2 months in the bottle to ensure greater harmony and freshness to the final product. Passo Sacro has a brilliant colour. On the nose, it reveals a rich and immediate bouquet, dominated by notes of fresh cherries that also return with great consistency on the palate. The taste is characterised by a pleasant freshness, perfectly balanced by the taste-olfactory correspondence, which keeps the cherry as the absolute protagonist right through to the finish. This rosé stands out for its balance, being fresh and lively but at the same time soft and enveloping.

It is born in the heart of Abruzzo, in Villamagna, a small village characterised by hills overlooking the Adriatic Sea and breathing the fresh air of the Majella. Sunny days and cool nights create the perfect environment for high quality grapes, enriched by a minerality that comes from the limestone-clay soils typical of the area. Produced entirely from Montepulciano grapes, these are grown using the traditional Abruzzo Pergola training system, which protects the bunches from direct sunlight and encourages optimal ripening of the fruit. Vinification follows a careful and respectful approach. Fermentation takes place in temperature-controlled stainless steel vats, with a long maceration of the skins for 30 days. This process allows the maximum extraction of aromatic and polyphenolic substances, guaranteeing structure and complexity to the wine. After fermentation, the wine is aged for six months in vitrified cement tanks, a material that preserves the freshness of the aromas, followed by three months of rest in the bottle for further balance. Valle Maris has a brilliant ruby red colour. On the nose, notes of red fruit jam such as black cherry and plum stand out, accompanied by a refined chocolatey hint. The taste is full and smooth, with intense hints of chocolate and a delicately spicy finish, making it rich and persistent. Perfect with cured meats and mature cheeses, it also goes well with meat-based first courses, such as pappardelle al ragù, or stewed white meats.

Scalunera is the name of a line of wines produced by the Piccini family on the Torre Mora estate. We are in the Etna area, in Contrada Alboretto Chiuse del Signore. Here they produce wines made from native Etna vines, such as this white wine, the result of a pure processing of Carricante grapes, a vine that best expresses the volcanic minerality and freshness of the area. The grapes, in particular, come from vineyards bred using the alberello and spurred cordon systems, and are located at an altitude of 650-700 metres above sea level. Harvested by hand at the end of September, the grapes are immediately cooled with carbonic ice to prevent oxidation. Then, after a soft pressing, the must is fermented at a controlled temperature for about 15 days. This is followed by an ageing phase on its lees for about 3 months. In the glass it has a beautiful straw-yellow colour with greenish reflections. The nose is fresh, with notes of white fruit and aromatic herbs. In the mouth it is rich, with lively acidity and a salinity reminiscent of the sea. The finish is long, persistent and savoury, with a mineral essence that enhances the character of the terroir. Scalunera Etna Bianco DOC is a versatile and gastronomic wine. It pairs well with seafood, grilled fish, vegetables and delicate first courses.
