The grapes, having reached full ripeness, are harvested and pruned in the cellar to be sent for processing. The must obtained undergoes alcoholic fermentation, with maceration of the skins lasting about 10/12 days, with frequent pumping over to favour the complete extraction of colour. After racking, the wine matures for a few months in steel vats, before being bottled and undergoing a further ageing period of at least 8 months. In the glass, one discovers a wine characterised by a beautiful, intense ruby red colour with distinct purple reflections. The nose is intense, with hints of red fruits, cherry, plum and delicate hints of vanilla. In the mouth, on the other hand, it reveals itself to be a pleasantly balanced wine, with a perfect correspondence to what was previously perceived. Today Barbera, the good one, is a wine of great pleasure and renewed nobility. A fine example is this Barbera d'Alba produced by the Roccasanta Winery. Pure Barbera grapes, harvested in a perfect state of ripeness and health and processed with care and attention at a controlled temperature, solely in steel tanks. Brilliant red in colour, of medium intensity, it amazes the nose with the fragrance of its bouquet. Delicate, typical, with clear notes of ripe red berry fruit, such as plum, blackberry, raspberry and blueberry. In the mouth it is pleasantly structured and full-bodied. Pleasantly fresh and tannic. A simple wine, but not trivial, capable of satisfactorily accompanying classic grilled meat or Piedmontese tajarin with mushrooms.

Galluccio, Dolcetto d'Alba DOC proposed here by Cascina Boschetti, Azienda Agricola Gombo, is produced from the grapes of a farm vineyard located at about 300 metres above sea level, in the municipality of Novello, in the province of Cuneo. South-west exposure, to ensure good sunshine for the ripening grapes, the vines sink their roots into a soil rich in clay and limestone, with several layers of sand. Harvested by hand, with rigorous selection of the bunches, this Dolcetto is made using traditional methods, with fermentation at a controlled temperature and maceration on the skins for 5-6 days. No passage in wood is foreseen in this case, but a quick refinement in stainless steel tanks that continues until bottling. The result is a wine characterised by a beautiful ruby red colour with violet reflections. The nose is pleasantly surprising for its fresh and vinous bouquet. In the mouth, it reveals a dry taste, with moderate acidity and a slightly almondy finish. It is the wine of the Langhe tradition and as such should be paired with the territory. Excellent, for example, with classic meat agnolotti. But it is also fabulous as an accompaniment to cured meats and cheeses.

First vintage: 1969. Renato Ratti's Barbera d'Alba DOC Battaglione has its most authentic quality in harmony. Pleasantly pungent when young, it is a wine suitable for good ageing. This is due to its origin, on the hills of La Morra, where the soils are able to give the grapes good acidity combined with great elegance. 100% Barbera, in this case the grapes are harvested by hand in September. In the cellar, they are destemmed and crushed, and sent to alcoholic fermentation in temperature-controlled steel tanks. At the end of the transformation, and after a period of rest, again in steel, the wine is bottled in the classic 'Albeisa', named after the city of Alba, an iconic bottle created by Renato Ratti himself in 1973. Here, too, the label bears a little soldier, to recall the exploits of the Piedmontese regiments of the 18th century. In the goblet it has a beautiful, very intense and brilliant red colour. On the nose, it surprises for its decisive aromas, with hints of ripe, dried plums and spices. In the mouth, however, it reveals a full, pleasantly fresh taste, and long persistence. The typical acidity and delicate structure of this wine make it elegant and harmonious. Perfect with rustic Piedmontese cuisine, meat dishes and mature cheeses.

Pure Nebbiolo, worked with patience to extract all the colour and best aromas of the grape. This preserves all the most elegant aromas of Nebbiolo, making the wine simple yet drinkable. The nose, in particular, stands out for the pleasantness of its varietal aromas, among which the notes of berries and roses are well highlighted. A sparkling wine, simple but not ordinary. But if the farmers of the Langa have always put a bottle of Dolcetto on the table for their lunches and dinners, there must be a reason. This is, in fact, the easiest wine to pair with any menu. With the right body and freshness. But no edges. Without excess. This Dolcetto proposed by Franco Boasso is no exception. It is made from grapes harvested in the company vineyards and processed within a few hours of harvesting. Soft crushing and maceration for 10 days interspersed with several pumpings to promote the extraction of colour and tannins. Then, after racking and malolactic conversion, the wine is left in steel for at least 6 months before bottling. The result is a fresh, ready-to-drink red. Lively in colour and characterized by a broad bouquet of aromas that play on notes of red fruit and must. In the mouth it is elegant and harmonious. Perfect companion for many preparations, from savoury first courses to Sunday roasts, served with baked potatoes. Always good.

The Barbera d'Alba DOC of Castello di Verduno represents the freshness and typicality of a great local wine. We are located in the municipality of Neive, in the heart of the Langhe, one of the most important wine-growing areas in Piedmont. Here the limestone-clay soils give the wines a balanced structure and lively acidity, particularly suitable for Barbera. The vines come from small vineyards with good exposures that guarantee optimal ripening of the grapes. A historical variety of Piedmont, the Barbera from the vineyards of Neive dates back to the 1950s and 1960s. These are therefore very mature vines, capable of giving the wine a superior quality. Harvested by hand to select the best bunches, the grapes are delivered to the cellar in small perforated crates to prevent them from spoiling during transport. Maceration, which lasts about 10 days, takes place in steel containers with manual punching-down to favour the extraction of colour and aromas. This is followed by a short maturation phase of 3 months in large Slavonian oak casks and 6 months in steel. Bottled without filtering, to best preserve all its qualities, it rests for a further 2 months in bottle before release. Intense ruby red colour with violet hues, the nose reveals a delicate bouquet, with notes of red fruits such as cherries, plums and blackberries, enriched by floral hints of violets. In the mouth, this Barbera d'Alba stands out for its perfect correspondence with what was previously perceived on the nose. Pleasant freshness makes this wine particularly lively and pleasant to drink. Perfect with light, fresh dishes such as appetisers, pasta with tomato sauce, white meats and fresh cheeses.

The pure Barbera proposed here by Cascina Chicco is called Granera Alta. Grapes come from Castellinaldo d'Alba, one of the most vocated areas for the production of this vine, so much so that there are documented traces of vines present on these hills since the middle of the 18th century. Harvesting begins at the end of September. The yield per hectare is kept deliberately low so that the grapes harvested are well concentrated and rich in sugars. Vinification in temperature-controlled stainless steel tanks and, after racking, ageing in traditional containers for about six months. The result is a wine that is rich and intense in colour, characterised by a fresh and fragrant bouquet reminiscent of underbrush and sour cherries, with a final light note of oriental spices. In the mouth, the wine offers considerable power, softened however by a pleasant smoothness given by the rich, juicy fruit. It easily accompanies richly flavoured dishes, including meat dishes. Excellent, finally, with soft, fat and fresh cheeses.
