Dedicated to the rediscovery of Trebbiano di Soave, an ancient indigenous variety with deep roots in the Veronese winemaking tradition, Massifitti is the result of an ambitious project. Specifically, the grapes used by Suavia for the production of this white wine come from the Massifitti vineyard, which extends over about 2 hectares, on a hill about 300 metres above sea level. The name Massifitti derives from the particular composition of the soil, characterised by large, compact basaltic rocks that give the soil a unique mineral richness. This volcanic terroir contributes decisively to the wine's personality, giving it a vibrant freshness and unique complexity. The Trebbiano clones used for the vineyard, planted in 2006, come from old vines selected to preserve the authentic characteristics of this variety. Over the years, Suavia has extended the vineyard area dedicated to Trebbiano di Soave to 6 hectares. Careful vinification takes place through spontaneous alcoholic fermentation, initiated by the indigenous yeasts naturally present on the grape skins. This preserves the freshness and aromas of Trebbiano di Soave, enhancing its authenticity. The wine then matures for 15 months in contact with the fine lees, again in steel, before undergoing a light filtration and bottling. This is followed by a further 12 months resting in the cellar before release. Brilliant straw yellow in colour, the nose reveals a bouquet of citrus fruits and sweet spices. In the mouth it is clean and vertical, well supported by lively acidity and an elegant, creamy structure. The finish is long and savoury. Accompanies hors d'oeuvres and first courses based on vegetables and fish. Excellent with oysters and raw seafood.

Produced entirely from Prié Blanc grapes, an indigenous Valdostan vine, the Blanc du Blanc Extra Brut from Cave Mont Blanc de Morgex et La Salle is a sparkling wine that stands out for its freshness and elegance. The Valle d'Aosta is a unique region due to its Alpine climate and particular geological conformation. Here we speak of heroic viticulture. The vineyards of Morgex and La Salle, located at the foot of Mont Blanc, extend between 900 and 1200 metres above sea level, one of the highest vineyards in Europe. This 'extreme' position and the significant temperature fluctuations favour a slow ripening of the grapes, allowing the Prié Blanc to develop a marked acidity and a mineral imprint that reflects the rocky and sandy soils of the region. The Prié Blanc here is free-range, i.e. not grafted onto American stems. This is an anomaly due to the isolation of the Aosta Valley, which preserved these vines from phylloxera, the parasite that devastated most European vineyards. Blanc du Blanc is produced according to the Classical Method, the same used for Champagne, with re-fermentation in the bottle. After the harvest, the base wine undergoes an initial fermentation in both stainless steel and barriques. Then, after bottling, the wine rests on its lees for at least 18 months, during which time it develops finesse and elegance. Dosed Extra Brut, it reveals a dry and clean profile. To the eye, the Blanc du Blanc has a straw-yellow colour with greenish reflections, a sign of freshness and vivacity. The bubbles, on the other hand, are fine and persistent, indicative of careful processing and prolonged ageing. The nose is intense and fine, with floral notes that intertwine with fruity hints, creating a symphony of delicate and enveloping aromas. In the mouth, the wine impresses with its persistence and taste balance. Aperitifs and regional specialities are its ideal accompaniment. Try it with Lardo DOP from Valle d'Aosta or with a vegetable flan with fondue.

Lacryma Christi Bianco DOC. One of the good territorial wines offered by the Feudi di San Gregorio winery. In this case, the wine comes from the processing of two indigenous grapes. Falanghina, one of the most widespread white varieties in Southern Italy, and Coda di Volpe, typical of Campania that takes its name from the characteristic shape of its bunches, which resemble (precisely) a fox's tail. Cultivated mainly in the provinces of Avellino, Benevento and Naples, it is a grape variety known for its late ripening. The bunches are usually harvested in mid-October, allowing a long ripening period that contributes to the complexity and richness of the aromas of the wine produced. Vinified and aged in stainless steel, this Lacryma Christi di Feudi presents itself in the glass with a beautiful crystalline straw yellow colour. The aromas are fresh, of white fruits and citrus peel. The aromatic persistence is good. In the mouth it is soft, fresh and with an elegant mineral component. Ideal as an aperitif, this white wine 'made in Irpinia' goes well with all kinds of appetisers and fish and vegetable dishes.

A little gem from central Italy. A DOCG wine produced only in the Lazio region with Cesanese grapes, an indigenous regional grape. A wine much loved by the locals that has had, in the past, unjustly, some difficulty in being appreciated outside the borders of the region. But with time, the improvement of the producers and, above all, thanks to the greater propensity of enthusiasts to go looking for the real peculiarities, today it is finally becoming a justly widespread product. Federici's Sapiens is an organic Cesanese del Piglio DOCG, obtained from a careful and thermo-conditioned processing and with a long maceration of the skins to allow the full extraction of the colour. In the glass, therefore, it is a beautiful, intense and brilliant ruby red. The nose is immediate and clean. It has a clear predominance of floral notes, among which violet is particularly recognizable, and juicy, ripe red fruit. The finish has hints of licorice and light balsamic notes. In the mouth it reveals a good power. It's full-bodied and rich. The tannins are well evident, though ripe, and contribute to making the wine the perfect companion to fine meat dinners.

An evocative and amusing name. We are talking about Sheep, Terre del Volturno IGP. 100% Coda di Pecora, an indigenous Campania grape variety that is certainly not among the best known in Italy. It is proposed by Azienda Agricola Il Verro, a certified organic winery, well established in the heart of Campania. But let us proceed with order. We are in the hills overlooking the Volturno river, in the Formicola area, in the province of Caserta. Here the climate is temperate and the soil rich in minerals. Coda di Pecora, a grape variety of ancient origins, is characterised by its ability to adapt to the particular conditions of the Campania region, producing fresh, fruity wines characterised by a natural elegance. Its curious name derives from the shape of the cluster, which resembles a sheep's tail. The grapes are harvested by hand in the first half of September, when they reach the right degree of ripeness. Vinified in white, fermentation takes place in temperature-controlled stainless steel tanks. The result ‘ A dry wine, but with a good balance between warmth and freshness, making it extremely pleasant and versatile. Luminous straw yellow, Sheep's nose reveals hints of fresh fruit, such as apple and pear, which intertwine with floral aromas of broom and a refreshing hint of mint. In the mouth, it is characterised by its dry taste, with good sapidity and discreet freshness. A pleasantly balanced white, characterised by a long persistence and a clean, fresh finish. Designed to be consumed young, Sheep goes well with fish and shellfish dishes such as prawns, squid and clams. Also try it with batter-fried vegetables, buffalo mozzarella from Campania and spaghetti with clams.

This wine is the brainchild of Firriato. The desire to give its many fans the opportunity to taste all of Sicily in a single glass. Quater Vitis, in fact, is a wonderful blend of four indigenous grape varieties, grown in different areas of the island, where each grape has the opportunity to give its best and express its full potential. Catarratto brings fruity and complex aromas, accentuated by the aromatic characteristics of Zibibbo. The elegance of Inzolia comes to their aid completed by the minerality of Carricante, which originates on Etna at an altitude of almost 700 meters above sea level in the Cavanera Estate. The result of this perfect synthesis is a wine characterized by a beautiful bright straw yellow colour, with marked greenish hints. The nose reveals a fine and complex bouquet, with fruity sensations reminiscent of medlar, orange, pineapple and mango, and floral sensations of orange blossom, elder and lime, but also lavender, thyme, ginger and flint. Hard to get bored. Each time you bring the glass closer to your nose you discover a slightly different nuance. It only takes a few minutes of contact with oxygen to discover a new nuance. In the mouth, finally, it is soft and gentle, well supported by a pleasant and vibrant acidity.

Schiava, locally known as Vernatsch, was the most important indigenous variety in South Tyrol for centuries. Today, in view of modern viticulture, in order to ensure better selection, the areas defined as 'suitable' have decreased. Schiava occupies the south/east and south/west-facing slopes around the 'legendary' Wine Route. Vernatsch Fallwind is a fresh, fruity wine. Simply a South Tyrolean classic. From vineyards with an average age of between 20 and 40 years, mostly cultivated using the pergola method, the grapes are harvested at the end of September, obviously by hand, in order to ensure a better selection of the bunches on the vine. Fermentation on the skins, after which the wine is left to mature in steel vats before bottling. In the glass, it has a beautiful ruby red colour. On the nose, the main aromas are those of fresh fruit, such as cherries, to which is added a delicate note of violets. In the mouth, then, a smooth and elegant wine is revealed, with a light note of bitter almond. A wine that is good right from the start, it is perfect with hors d'oeuvres, especially speck, sausages, soft cheeses and black bread. Served chilled, it also perfectly accompanies fish.

Tinta de Toro is the traditional name for Tempranillo, an indigenous variety of Spain, mainly cultivated in the Ribera del Duero wine region and the neighbouring Toro region. It grows well in hot and dry climates, where it can best develop its intense flavour. The one proposed here by Bodegas Covitoro fully represents its type. It is made with grapes from the best estate plots, aged between 30 and 45 years. Mature' plants, therefore, capable of producing very high quality fruit that the winery's technicians transform using traditional methods. In the glass it has a beautiful cherry colour, with violet reflections, clean and bright with fine tears. The nose reveals aromas of good intensity, with a clear predominance of black fruit aromas, such as blueberries and currants, but also coffee beans, vanilla and toffee. The mouth reveals a wine characterised by a velvety and rich sip. Almost creamy on the palate, it has ample and sweet tannins. A wine of great pleasantness and good structure, it goes well with grilled red meat dishes.

An unprecedented red wine born from the encounter of three indigenous grape varieties: Primitivo, Malvasia Nera and Negroamaro. A wine capable of providing a unique sensory experience, rich in intense aromas and flavours. The grapes, carefully selected and hand-picked, are vinified separately with temperature-controlled maceration. Fermentation takes place in stainless steel, preserving the freshness and varietal aromas. This is followed by a short bottle ageing that completes the wine's harmony. The colour is intense ruby red, with garnet reflections that evoke the ripeness of the grapes. The nose reveals a complex and enveloping bouquet, where notes of ripe cherries and plums intertwine with spicy hints of black pepper and cocoa. In the mouth, it is structured and soft, with velvety tannins and a pleasant freshness that accompanies a long, savoury finish. The sip is balanced and harmonious, with a persistence that leaves the palate pleasantly satisfied. Perfect to accompany tasty traditional Apulian dishes, it marries beautifully with red meats, roasts with elaborate sauces and moderately mature cheeses. Its complexity and strong character, however, also make it ideal to accompany more elaborate dishes such as game and first courses with meat sauces.
