A fine example of this is this Areale, which originates from grapes harvested 'between land and sea', in the cradle of DOC Manduria. It is from here that the best Primitivo grapes come, those that best represent the authentic and faithful expression of the varietal. Giustini works his grapes with care and skill, proceeding with maceration and alcoholic fermentation induced by selected yeasts. The process, with constant temperature control, protae for about 10 days. Immediately after racking, the wine is then passed into French oak barriques, where it continues its slow maturation. Ruby red in colour with garnet hues, this Primitivo has scents typical for the variety, with notes of red and dark fruit, such as black cherry, plum and cherry. In the mouth it is pleasantly soft and ample, with elegant tannins, well supported by a pleasant freshness. It is the right wine to accompany roasted and stewed meats, but also first courses with red sauces, rich soups and mature cheeses.

When the climate becomes hot, as is often the case in Puglia, to cultivate grapes we often resort to the ancient folk wisdom that the vine must grow low, ripening its clusters close to the ground, to benefit from even the slightest coolness from the earth. The traditional espalier system is therefore preferred to the modern espalier. Beautiful to look at and effective in terms of the quality produced. But very, very tiring for those who have to take care of it. Every operation, in fact, must be carried out manually, without the help of any machine. Giustini offers this Acinorè, 'Old Vines'. This is a Primitivo di Manduria DOC, made from grapes cultivated in the Alberello style. A living heritage that the company preserves, protects and is committed to enhancing. Acinorè, in fact, represents the best interpretation of Primitivo proposed by the winery. Harvested - obviously - by hand, after destemming and pressing the maceration period lasts about 15 days, followed by alcoholic fermentation and a long period of maturation in French oak barriques. This reveals a wine characterised by a beautiful, intense ruby red colour, with complex aromas reminiscent of well-ripened red and dark fruit. Then vanilla and even chocolate. In the mouth it is full, soft and balanced. An important red, the kind that requires a dedicated menu. Very tasty first courses and meats subjected to long cooking. It is called Patù and is, technically, a Salento IGP from pure Primitivo grapes. In the winery's intentions, Patù is a 'Primitivo with character'. A tribute to the roots of the Papadopoli family, for four generations at the helm of the Giustini winery, whose ancestors of Greek origin settled in the past in the heart of Salento to dedicate themselves to farming life. A wine that astonishes for its harmony and envelopment, it comes from a manual harvest of the best Primitivo grapes, starting in the last ten days of September. Once in the cellar, the grapes are selected, destemmed and pressed. This yields the must, which is left to macerate with the skins and then undergoes alcoholic fermentation. This process lasts for about 10-12 days. Once the transformation is complete, the wine is then refined for a few months in steel tanks before being bottled. Only after a further resting period in the cellar, then, is the wine ready to go on the market. Deep ruby red in colour, the nose reveals an unmistakable aroma of well-ripened red fruit. In the mouth, however, it proves to be a wine of great character and good structure. Although it is pleasantly robust, however, its fruity character remains evident. It is the wine recommended with savoury first courses and, above all, roast meat.

Grapes that love the sun, and from the sun they draw the energy to ripen and make their grapes juicy and rich in sugar. Primitivo produces wines of great personality, often with a full body and soft, elegant tannins. This Brut proposed by Vite Colte is no exception. An intense red, right from the colour which looks like an impenetrable ruby with evident violet reflections. The nose surprises for its aromatic richness, with notes of blackcurrants easy to distinguish from the first moment. Same suggestions at the tasting. Here the fruit is still fresh and crunchy, well integrated with the softness given by the alcohol and perfectly balanced by the tannins. Good and pleasant persistence. A wine of great character, a perfect companion for lunch or dinner, strictly based on grilled meats.

Torcicoda, Salento IGT, is a very contemporary interpretation of Primitivo. First Apulian wine among the best 100 wines in the world for Wine Spectator, it comes from grapes harvested with a slight delay compared to the ideal ripening, therefore slightly overripe. After pressing, maceration lasts for about two weeks in stainless steel tanks. During this phase, the wine completes alcoholic fermentation at a controlled temperature not exceeding 27 °C and is then transferred to French and Hungarian oak barriques, where malolactic fermentation takes place. For the final stage of maturation, Torcicoda is left to mature for approximately 10 months in barriques, and a further 6 months in bottles. Only then is the wine ready to be released on the market. Intense ruby red in colour with a light shade of violet, the nose is striking for its intense fruity notes of morello cherry and plum which combine with sweet spicy sensations of liquorice and vanilla. In the mouth the entry is soft and ample, with an elegant tannic texture that well accompanies a remarkable structure. The finish is long and persistent with a pleasant aftertaste of cherries in alcohol.
