It is called Patù and is, technically, a Salento IGP from pure Primitivo grapes. In the winery's intentions, Patù is a 'Primitivo with character'. A tribute to the roots of the Papadopoli family, for four generations at the helm of the Giustini winery, whose ancestors of Greek origin settled in the past in the heart of Salento to dedicate themselves to farming life. A wine that astonishes for its harmony and envelopment, it comes from a manual harvest of the best Primitivo grapes, starting in the last ten days of September. Once in the cellar, the grapes are selected, destemmed and pressed. This yields the must, which is left to macerate with the skins and then undergoes alcoholic fermentation. This process lasts for about 10-12 days. Once the transformation is complete, the wine is then refined for a few months in steel tanks before being bottled. Only after a further resting period in the cellar, then, is the wine ready to go on the market. Deep ruby red in colour, the nose reveals an unmistakable aroma of well-ripened red fruit. In the mouth, however, it proves to be a wine of great character and good structure. Although it is pleasantly robust, however, its fruity character remains evident. It is the wine recommended with savoury first courses and, above all, roast meat.

Write Primitivo and read Puglia. Yes, because this ancient and much-loved grape variety is actually native to Apulia, so deeply rooted in its territory that it has practically become its symbol. Primitivo is used to produce wines with intense aromas of ripe fruit, such as black cherries, plums and blackberries, and hints of spices such as black pepper and vanilla. A fine example of this is this Areale, which originates from grapes harvested 'between land and sea', in the cradle of DOC Manduria. It is from here that the best Primitivo grapes come, those that best represent the authentic and faithful expression of the varietal. Giustini works his grapes with care and skill, proceeding with maceration and alcoholic fermentation induced by selected yeasts. The process, with constant temperature control, protae for about 10 days. Immediately after racking, the wine is then passed into French oak barriques, where it continues its slow maturation. Ruby red in colour with garnet hues, this Primitivo has scents typical for the variety, with notes of red and dark fruit, such as black cherry, plum and cherry. In the mouth it is pleasantly soft and ample, with elegant tannins, well supported by a pleasant freshness. It is the right wine to accompany roasted and stewed meats, but also first courses with red sauces, rich soups and mature cheeses.

From the heart of Apulia comes Vola, Primitivo Terre d'Otranto DOP, an intense and vibrant red that encapsulates the soul of Salento. It is produced by the Menhir winery in Minervino di Lecce. Primitivo in purity, it offers a unique sensory experience, capable of conquering the palate of the most demanding enthusiasts. The grapes used for the production of this wine are rooted in a unique terroir, characterised by sandy-loam soils on calcareous rock. The warm, Mediterranean climate, mitigated by sea breezes, creates the ideal conditions for the growth of grapes of the highest quality, rich in sugars and aromas. Harvested by hand in the first week of September, vinification is traditional in red, with temperature-controlled maceration designed to enhance the aromas and flavours of the original grape variety. At the end of the transformation, the wine matures in the bottle for a few months, completing its evolution process. In the glass, it has an impenetrable ruby colour with violet reflections. On the nose, it reveals an explosion of fruity blueberry aromas, interwoven with notes of Mediterranean herbs, vanilla and balsamic hints. In the mouth, it is dense and enveloping, with extraordinary drinkability and a lingering finish. Good already today, the producers recommend uncorking it within 5-10 years, pairing it with main meat dishes, such as Angus fillet with cardoncelli mushrooms, or with mature cheeses such as medium-aged canestrato.

Proudly proposed by Cantina di San Marzano, it is made from pure Primitivo grapes. Vines grown not far from the sea that give rise to fruit rich in sugar and flavour, which in turn give rise to a full-bodied red wine, characterised by a beautiful minerality and balsamicity, as well as an abundance of fragrant red fruit, typical of the best-known Apulian varietal in the world. Matured in French and American oak barrels for 6 months, Talò presents itself in the glass with a beautiful ruby red colour, enriched with violet reflections. The nose reveals a broad and gratifying bouquet reminiscent of ripe cherries and plums, with pleasant notes of cocoa and vanilla. On the palate, on the other hand, one discovers a wine of fine structure, softened by the persuasive warmth of the Primitivo, and ending with notes of long sweetness. An intense red wine that requires an equally important pairing. Excellent, for example, with robust first courses, but also lamb, game and hard cheeses.
