Produttore di vino originario dell’area vitivinicola di Yenda, nel New South Wales, Ralph ha trasmesso al figlio Daniel la passione per il mondo del vino. Nonostante la sua famiglia fosse originaria del New South Wales, Dan ha poi deciso di intraprendere un’avventura tutta propria nella regione di Barossa Valley, South Australia, annoverata tra le più prestigiose zone vitivinicole del continente. Sigurd Rosso ‘RAG’ ha origine dall’incontro tra Syrah, Viognier e Mataro, le prime due varietà provenienti dalla zona di Barmera mentre il Mataro, altro nome per il Mourvèdre, coltivato poco a nord di Barossa, a Ebenezer. Il Syrah e il Viognier vengono co-fermentati con 7 giorni di macerazione pellicolare assieme a un 13% di Viognier. Il processo fermentativo avviene in tini di acciaio inox aperti mentre la successiva fase di maturazione, che si protrae per 9 mesi, ha luogo in una combinazione di botti di rovere francese di varia capienza. Prima del definitivo imbottigliamento viene poi aggiunta una piccola percentuale di vino da uve Mataro raccolte in epoca leggermente anticipata. Il ‘RAG’ Rosso di Sigurd possiede una colorazione rosso rubino intenso e profondo. Al naso vivaci sentori di frutti neri come la mora e il mirtillo si alternano a dolci sfumature di spezie natalizie. L’assaggio mostra sorprendente leggiadria e succosa freschezza, nonché tannini morbidi a corredo del finale beverino. Lo stesso produttore Dan Graham suggerisce di servire il suo ‘RAG’ Rosso a una temperatura fresca, accompagnato da una gustosa focaccia alla mortadella.
