A true speciality of Salento, this Vetrère-branded Crè, Bianco IGP, comes from a pure processing of Minutolo grapes, grown in the province of Taranto, where the heat and the sun allow the bunches to reach perfect ripeness with all their best aromas. In this case, the harvest is carried out mechanically, to ensure that the grapes reach the winery quickly, without being ruined by unwanted fermentation. After all, the Salento has very hot summers and timing during harvesting is essential. Vinification is simple but accurate, in steel at a controlled temperature. For the ageing phase, then, the wine is left, again in steel, in contact with its fine lees, acquiring a certain complexity and a pleasant aromatic richness. Thus we discover a wine characterised by a beautiful bright straw yellow colour. On the nose, the olfactory hints are clear, reminiscent of orange blossom, lime and even exotic fruits such as papaya and pineapple. In the mouth, however, its natural freshness is well balanced by the richness of the fruit. It comes from a very interesting blend of Chardonnay and Minutolo grapes. It is, therefore, the meeting in the heart of Salento of a great international grape variety, capable of expressing itself at its best in different climates and on different soils, and one of the most beloved autochthonous grape varieties of our South. The vineyards enjoy warm sunshine and ideal climatic conditions, being located a few metres above sea level. Harvested when perfectly ripe, soft pressing followed by a phase of static decantation, then fermentation in French oak barriques. During the wine's stay in wood, there are frequent batonnages, to move the fine lees that settle at the bottom of the container, and allow them to transfer unique aromas and flavours to the finished product. In the glass it is a beautiful straw yellow colour, with a fragrance that recalls sweet fruit, such as yellow peach and white melon. All well integrated with balsamic notes that add depth to the nose. In the mouth it proves to be a full-bodied wine, where the sweet notes previously perceived return.

A white grape native to southern Italy, in particular to the region of Campania, Fiano - over the last twenty years - has also been adopted by wine-growers in Apulia, thanks to its good adaptability to the region's decidedly Mediterranean soils and climate. An ancient grape variety, its history dates back to the times of ancient Rome. It is best known for producing quality wines that offer remarkable complexity and a distinctive character. Fiano di Puglia wines, in particular, are distinguished by their fresh, aromatic style and full of personality. Torcicoda, Salento IGT, is a very contemporary interpretation of Primitivo. First Apulian wine among the best 100 wines in the world for Wine Spectator, it comes from grapes harvested with a slight delay compared to the ideal ripening, therefore slightly overripe. After pressing, maceration lasts for about two weeks in stainless steel tanks. During this phase, the wine completes alcoholic fermentation at a controlled temperature not exceeding 27 °C and is then transferred to French and Hungarian oak barriques, where malolactic fermentation takes place. For the final stage of maturation, Torcicoda is left to mature for approximately 10 months in barriques, and a further 6 months in bottles. Only then is the wine ready to be released on the market. Intense ruby red in colour with a light shade of violet, the nose is striking for its intense fruity notes of morello cherry and plum which combine with sweet spicy sensations of liquorice and vanilla. In the mouth the entry is soft and ample, with an elegant tannic texture that well accompanies a remarkable structure. The finish is long and persistent with a pleasant aftertaste of cherries in alcohol.
