Minù is the result of Vètrere's desire to explore the infinite variations of Minutolo, an indigenous Apulian grape variety on which the company has been working and experimenting for 15 years. Hand-picked from the healthiest grapes in boxes, the bunches are carefully selected once they reach the winery. The maceration phase precedes fermentation, also in steel, at a controlled temperature. At the end, the wine is bottled and left to refine in glass for no less than three months. Like all Orange wines, Minù is an extremely versatile wine. Cubardi is an important Primitivo that comes from vineyards 65 years old. A small natural work of art capable of producing highly concentrated fruit. Thus we receive in our glasses a white wine characterised by a beautiful clear and lively colour. The nose is clean and enveloping, characterised by a fine aroma of peach and wild flowers. It is called Patù and is, technically, a Salento IGP from pure Primitivo grapes. In the winery's intentions, Patù is a 'Primitivo with character'. A tribute to the roots of the Papadopoli family, for four generations at the helm of the Giustini winery, whose ancestors of Greek origin settled in the past in the heart of Salento to dedicate themselves to farming life. A wine that astonishes for its harmony and envelopment, it comes from a manual harvest of the best Primitivo grapes, starting in the last ten days of September. Once in the cellar, the grapes are selected, destemmed and pressed. This yields the must, which is left to macerate with the skins and then undergoes alcoholic fermentation. This process lasts for about 10-12 days. Once the transformation is complete, the wine is then refined for a few months in steel tanks before being bottled. Only after a further resting period in the cellar, then, is the wine ready to go on the market. Deep ruby red in colour, the nose reveals an unmistakable aroma of well-ripened red fruit. In the mouth, however, it proves to be a wine of great character and good structure. Although it is pleasantly robust, however, its fruity character remains evident. It is the wine recommended with savoury first courses and, above all, roast meat.
