Hand-picked from the healthiest grapes in boxes, the bunches are carefully selected once they reach the winery. The maceration phase precedes fermentation, also in steel, at a controlled temperature. At the end, the wine is bottled and left to refine in glass for no less than three months. Like all Orange wines, Minù is an extremely versatile wine. A true speciality of Salento, this Vetrère-branded Crè, Bianco IGP, comes from a pure processing of Minutolo grapes, grown in the province of Taranto, where the heat and the sun allow the bunches to reach perfect ripeness with all their best aromas. In this case, the harvest is carried out mechanically, to ensure that the grapes reach the winery quickly, without being ruined by unwanted fermentation. After all, the Salento has very hot summers and timing during harvesting is essential. Vinification is simple but accurate, in steel at a controlled temperature. For the ageing phase, then, the wine is left, again in steel, in contact with its fine lees, acquiring a certain complexity and a pleasant aromatic richness. Thus we discover a wine characterised by a beautiful bright straw yellow colour. On the nose, the olfactory hints are clear, reminiscent of orange blossom, lime and even exotic fruits such as papaya and pineapple. In the mouth, however, its natural freshness is well balanced by the richness of the fruit. A wine of great pleasantness and versatility, this Minutolo di Vetrère seems to have been born to accompany tasty shellfish dishes.

It comes from a very interesting blend of Chardonnay and Minutolo grapes. It is, therefore, the meeting in the heart of Salento of a great international grape variety, capable of expressing itself at its best in different climates and on different soils, and one of the most beloved autochthonous grape varieties of our South. The vineyards enjoy warm sunshine and ideal climatic conditions, being located a few metres above sea level. Harvested when perfectly ripe, soft pressing followed by a phase of static decantation, then fermentation in French oak barriques. During the wine's stay in wood, there are frequent batonnages, to move the fine lees that settle at the bottom of the container, and allow them to transfer unique aromas and flavours to the finished product. In the glass it is a beautiful straw yellow colour, with a fragrance that recalls sweet fruit, such as yellow peach and white melon. All well integrated with balsamic notes that add depth to the nose. In the mouth it proves to be a full-bodied wine, where the sweet notes previously perceived return.

Its name is Finis and it is a pure Chardonnay, proposed by the Vetrère winery in Salento. A fresh, certified organic wine, produced from grapes grown in the winery's vineyards in Monteiasi and Montemesola in the province of Taranto. We are located in an area particularly suited to the production of quality grapes, where the sun shines generously for several months a year and the climate is dry. After the harvest, the grapes are quickly brought to the cellar to be processed in full respect of the raw material. Fermentation takes place in stainless steel tanks at a controlled temperature and, at the end of this phase, the wine is left to mature "sur lie" for a period of about two months. This allows it to enrich itself in terms of aromas and complexity, without losing its freshness and immediacy. Straw yellow with greenish reflections, the nose has hints of peach and tangerine. In the mouth, on the other hand, it stands out for its pleasant freshness, thanks to clear hints of citrus peel and notes of ripe fruit. Armentino represents the fifth essence of Apulia. A blend of Negroamaro and Primitivo in equal parts, coming from old vineyards with plants that reach 50 years of age. Obviously plants that produce little, but well, grown with the traditional system of the Apulian gobelet. An ancient method that is often abandoned because of the great commitment it requires, given that every process, every treatment in a vineyard cultivated with this system must necessarily be done by hand. No compromises. Armentino is a wine that is easy to define as enjoyable, due to its great elegance and concentration of aromas and flavours. On the nose, in particular, the bouquet has something overripe, almost dense. Plum and sour cherry are recognizable, clean and well-defined. Cubardi is an important Primitivo that comes from vineyards 65 years old. A small natural work of art capable of producing highly concentrated fruit. Few bunches, super rich, which are enhanced by Schola Sarmenti through careful processing. Vineyards cultivated with the traditional Apulian gobelet system that requires great skill and, unfortunately, also a lot of manual work. After harvesting, the grapes are delicately placed in small aerated boxes and delivered to the winery to be processed within a few hours. Then, after vinification, the wine matures for a period of about 6 months in second-passage French oak tonneaux, and then completes its refinement with a further 8 months in the bottle. The result is an intense and concentrated red, with notes of ripe fruit and hints of tobacco, chocolate and coffee. In the mouth it is velvety and enveloping, with tannins capable of expanding delicately. A wine with great personality that undoubtedly requires an important pairing. Excellent with large meat stews, it can also be a pleasant glass to sip slowly while chatting in the evening.
